Honey Syrup Cake

About the Recipe

A delectable, genuine honey cake soaked in syrup. This traditional-style cake is a favourite in the Mediterranean area, particularly Greece. Provides the ultimate celebration or comfort food with the sensation of savouring pure sunshine with every mouthful, no matter the season. The delicious, full-bodied honey flavour really makes the taste buds sing.

Ingredients

1 cup Plain Flour

1 1/2 tsp Baking Powder

1/2 tsp Salt

225g Butter (at room temperature)

2/3 cup Honey

4 large Eggs (at room temperature)

3 Tbsp Milk slightly warmed

1 pinch Orange or Lemon zest

1/3 cup Almond flakes


SYRUP:

2/3 cup Honey

1/4 cups Water

Squeeze of Lemon Juice

Instructions

Step 1

Preheat oven to 175° C bake function. Line 20cm round springform pan with baking paper.


Step 2

Sift dry ingredients into small bowl. In mixer, cream butter and honey for 3 minutes until smooth and fluffy, scraping down sides halfway through.


Step 3

Using a wooden spoon, add one egg and mix 30 seconds then add 1/4 of the flour mixture. Mix until batter comes together then repeat process until all added. (Warning - your arm may get a little sore! BUT it is worth it)


Step 4

Stir in milk and zest until batter is almost smooth - thick but soft. Scrape into prepared pan, smooth surface and sprinkle with almonds. Bake 45 minutes (test with skewer for doneness). Cool 30 minutes in pan.

Step 5 - To Make Syrup:

Bring honey and water to a gentle boil for 5 minutes over medium low heat. Add lemon juice and boil 2 more minutes.

Remove from heat and cool for 10 minutes.


Step 6

Using a skewer, poke about 30 holes in surface of cake. Pour 1/4 of the warm syrup across surface. Once it has mostly soaked in, repeat 3 times, waiting between each pour for syrup to soak in. Leave cake to soak for 15 minutes.


Serve warm as is, or with a large dollop of cream or vanilla ice cream (or both). To add a special touch sprinkle extra almond flakes and a drizzle of extra warmed honey over the cream.
