Blackberry Bliss Muffins

12 Texas-size muffins or 18 medium muffins



About the Recipe

Enjoy these muffins as they are or for an extra delicious treat serve with whipped cream for dessert. This is a truly scrumptious way of combining blackberries you pick on your late summer outings with your favourite honey. A real Autumn harvest treat!


1/2 cup Clover Honey (or your favourite variety)

2 1/3 cups Flour

1/2 Tbsp Baking Powder

1 tsp Baking Soda

1/3 tsp Salt

1/3 cup Oil

1 tsp Vanilla Essence

2 Eggs

3/4 cup Buttermilk

1 cup Fresh Blackberries (can use frozen if fresh unavailable)

1/2 cup Dark Chocolate Chips

1/2 cup sliced Almonds


1/2 cup Clover Honey

1/2 cup sliced Almonds


Step 1

Preheat oven to 200° C bake function. Grease your desired size muffin pans.

Step 2

Beat together oil, vanilla, eggs, buttermilk and first measure of honey.

Step 3

Sift dry ingredients into mixture stirring until just combined.

Step 4

Fold in blackberries, chocolate chips and almonds.

Step 5

2/3 fill muffin holes, then drizzle 1 tsp honey over each muffin, sprinkle topping almonds over muffins and drizzle with remaining honey.
